Tex-Mex pizza Yummm!

I had to alter some of the ingredients - for ex, I didn't have any cilantro

Cook tiny cubes of chicken (3/4 lb) and small cubes of a yellow bell pepper (1/2 of a medium) in a pan with 1 Tbsp of canola oil over med heat.

Heat oven to 450 degrees.

Transfer ckn mix to clean plate, wipe out pan and heat 4 whole-wheat flour tortillas (about a min ea side) and transfer to cookie sheet. Spread 1/2 cups worth of salsa over the 4 tortillas, top with ckn mixture, sprinkle with shredded reduced fat mont-jack cheese (it called for 2/3 cup overall).

Bake about 6 min (til cheese is melted). Sprinkle with cilantro (I used tarragon). Cut into wedges and enjoy - good.

Each pizza is 6 points.
